Joy teaches in a Spanish state Primary school and has trained teachers in Britain, Portugal, Egypt and throughout Spain, working for the British Council and respective Ministries of Education. She has written several articles and collaborated on teaching materials for many levels and audience types. She is co-author of the Macmillan course for Infant Play with Patch and Patch the Puppy.
